Tell us a little about yourself...

I started out a Gluten-Free Instagram Account when I got diagnosed with Coeliac Disease in March 2014. At that time no one had really heard about it or knew what it was? I hadn't even heard of it myself.
I started my page so I could share my gluten-free stories, my feelings, my recipes & where you can shop gluten-free.
I wanted to help anyone else out there who was suffering or might be thinking they might have it.

What inspired you to start an Instagram account for gluten-free food?

What have you learnt about yourself this year?

This year I have learnt not to take no sh*t. If I feel something isn't right I'll speak up about it. I feel more confident telling people how it is and not hiding behind my face. ( In my personal life and work-life)

What would you tell your 15-year-old self?

I would tell my 15year old self not to worry about the silliest of Things. Things always work out in the end. Don't always trust your closest friends, they can stab you in the back at any time.

Tell us a beauty secret...

Secret beauty trick, my stylpro make up brush cleaner. Every girl should own one. Clean brushes in under 1 min.

In my next life, I should be...

In my next life, I should be a police officer/crime investigator 🤣 or for a quiet life a cat 😺

Which album could be the soundtrack of your life?

What puts a smile on your face?

Coming home to my Boyfriend Nick and Oriental Kitty Nylah.

Where do you see yourself in ten years from now?

10yrs from now I will hopefully have 2 healthy children. Maybe Married?
Sold our current house and living somewhere else. Maybe move away from the area. Job wise I would love to be a nail technician and a successful blogger 🤞☺

The best city you’ve ever visited?

London is the best city I have visited. I used to love going there as a child. Even more so with College when I did performing arts at college. The west end, the restaurant's, the hustle and bustle & the fabulous shopping. I would always walk around with a huge smile on my face whilst in London.

What's the craziest thing you've done?

I would say the craziest thing I have done is perform a Beyonce dance routine ( in my college days) in the middle of Preston (on my own)in front of a crowd and Rock FM to win an Apple iPod!! Hahaha

I feel most confident when I...

I feel most confident when I have a tan.

What 3-course meal would you make for a dinner party?

The starter would be a large sharing camembert with chorizo inside. To dip in with GF bread stocks or nachos.

Main would be a GF Heck Sausages with mash, GF gravy and mint sauce.

Dessert would be GF chocolate eclairs.

Which 5 people dead or alive would you cook for?

My Grandad Ted and Nana Jean (sadly not with us)
Darren Hayes, Rihanna & Will Mellor.

Finally, we tried your gluten-free Nutella brownies, do you think you could share the recipe? We are OBSESSED.

Gluten-Free Nutella Brownies recipe. ( & no gluten-free option)

  • 85g Gluten Free Plain flour (can be substituted with plain flour)
  • 100g caster sugar
  • 120g stork baking butter
  • 100g dark chocolate
  • Approx 6 Teaspoons of Nutella
  • 3 large eggs
  • 1 tsp vanilla extract

Method

1. Grease an 8" square tin. Then line with greaseproof paper. Then preheat the oven to 160°c

2. Melt the chocolate & butter in a bowl over a boiling hot pan of water. Keep stirring until the butter and chocolate have melted together.

3. Add 3 teaspoons of Nutella to your chocolate and butter mix. Stir together until smooth. Set aside to cool slightly.

4. In another bowl mix together the 2x sugars then add the eggs one at a time mixing them thoroughly in between. Then add your vanilla extract.

5. Add the chocolate mixture to the sugar mixture. Stir together until both are well incorporated.

6. Sift in the flour and fold in the mixture until all mixed in.

7. Transfer your mixture into the tin and then dollop spoonfuls of your remaining Nutella onto your brownie mix and swirl with a knife.

Enjoy 🍫

(caution, one may lead to another... or three more).
